Broccoli and Cheddar Omelet

I love omelets as any easy weeknight dinner.  Tonight I split one with the husband, which meant classic flavors:  broccoli and cheddar.  I’d never tried to put broccoli in an omelet before, but it worked beautifully.  I just minced it finely and softened it in a bit of butter before adding it to the middle of the omelet.  Yum.  Along with my omelet, I had spinach salad with lemon and olive oil and a big handful of strawberries.  And the husband whipped out some leftover naan dough and made us piping hot whole wheat naan to go with dinner.  I promise to get him to post the recipe soon!

Also, I want to point out my new recipe favorites tab up at the top of the page.  It is very much a work in progress, but I decided it was time to round up some of my old favorites and more successful experiments.  If there’s something you’d like to see added or if you’d like me to remake or clarify anything, let me know!
