Chocolate Chip Cookies

I mentioned awhile back that Blueberry Mom has a rotation of about half a dozen killer dessert recipes that will get you through any situation in life.  These fabulous oatmeal chocolate chip cookies are one of them.  Everyone needs a great chocolate chip cookie recipe: they are the perfect crowd-pleasing dessert.  This batch is going to be flown across the country to be served at the reception for Blueberry Sis’s senior recital on Saturday.

I have no idea where this recipe originally came from, but it is amazing.  The cookies are quite different from your average chocolate chip cookie: rather than being bready and chewy, they are thin and crunchy and buttery.  I like them better this way!  Be warned:  please pay careful attention to the baking instructions or you will have a cookie mess on your hands…these do not look or behave like most cookies during baking!

Chocolate Chip Cookies

Ingredients:

  • 2 eggs
  • 1 c butter
  • 1 c sugar
  • 1 c brown sugar
  • 1 t vanilla
  • 1/2 t salt
  • 1 t baking soda
  • 1/2 t baking powder
  • 2 c flour
  • 1 c oatmeal
  • 2 c chocolate chips (preferably semi-sweet)

Instructions:

Cream butter and sugars together, then mix in eggs and vanilla.  Mix dry ingredients together in a separate bowl, then combine dry ingredients with creamed mixture.  Add chocolate chips.

Now the tricky part.  These cookies are full of butter and will spread.  A lot.  Use small spoonfuls (a rounded teaspoon should work) with plenty of space between.   You’ll get 40-50 cookies out the batch depending on how big you make the cookies and how much dough you ate prior to this point.

Bake the cookies at 350 for about 10 minutes.  Beware:  the cookies will still be extremely soft and flat at this point.  The edges might be just beginning to set, but the middle will be very soft.  Take them out of the oven and let them cool on a wire rack before removing.  They will be much too soft to handle when they come out of the oven, but if you let them cool, they will become crispy and easy to remove.  Enjoy!
