Apple Crumb Pie


This is my absolute favorite apple pie.  It is utterly simple and utterly delicious.  In my opinion, the easiest way to ruin apple pie is to add a bunch of nonsensical ingredients to muck up the filling.  You don’t need them!  This pie is piles of simple, glorious cooked apple encased between buttery pie crust and a layer of delicious cinnamon crumb topping.  The crumb topping works beautifully for an apple crisp…just omit the pie crust and put the apples straight into a cooking dish.

Apple Crumb Pie

1 batch crumb topping (see below)
1 batch pie crust (whichever you like)
6 Granny Smith apples, cored, peeled and thinly sliced

Crumb topping:
1 c flour
1 c sugar
1 stick butter
1 1/2 t cinnamon
1/2 t salt

To make the topping

Combine ingredients in one of two ways.  You can cut the cold butter into pieces, and use a food processor.  Or you can soften the butter and use a pastry cutter.  Mixture should resemble coarse meal.

To make the pie

Line a 10″ deep dish pie pan with your favorite pie crust.  Then fill with Granny Smith apples, peeled and sliced thinly.  You want the apples to be a bit heaping and it will take about 6 apples.  Then carefully pour the topping over the top.  Pour topping in the center then use hands to feather the topping out to the edges.  It’s a slow process.

Bake for an hour at 350.

Serve warm or at room temperature, with a little vanilla ice cream or whipped cream, if desired.  (Blueberry Mom is also known to pour heavy whipping cream straight over the top, which is amazing.)  Enjoy!
